The New York steak at the Binion's Horseshoe 24th floor Ranch Steakhouse used to be as good as any.
I haven't been there since Harrah's took over. Does anyone know if it has gone downhill?
And speaking of the Horseshoe - I stayed there five times in a little more than a year just before Binion's went under and have yet to receive an invitation to come back. I know they were not afraid of my red action or is that the reason they don't care to see me again?

The Steakhouse at Circus Circus is indeed one of the better kept secrets in Las Vegas. The mystery is how this really excellent steakhouse with plenty of old Vegas charm ended up in the middle of Circus Circus.
Another find in an unexpected place is The Embers at the Imperial Palace. The IP buffet has a completely justified reputation as one of the worst buffets in Las Vegas. Fortunately, this does not extend to The Embers steakhouse, which is actually very good, and reasonably priced, if you cannot swing a comp.
Binion's Ranch Steak House used to be my favorite place downtown (located on the 24th floor, you get an awesome view of the strip with your steak), but I, too, have not been back since the Harrah's takeover. However, I have heard that they retained the entire restaurant staff, so hopefully they had enough sense to leave a good thing alone.
For elegant Chinese, try Lillie Langtry's at the Golden Nugget. As a bonus, they serve a pretty good steak here as well, although the emphasis is on the excellent Chinese cuisine.
On a recent visit to Las Vegas I also enjoyed an exceptional Asian dinner at Little Buddha, located in The Palms, courtesy of Viktor and Bettie (thanks guys). This restaurant also features a sushi bar.

How is the buffet at the Monte Carlo? I will be staying there in February.

I was pleasantly surprised at the Monte Carlo buffet. It ain't the best in town, but it was pretty damn good. They will let you go in to look at what they have before you decide if you want it. A wide variety of choice in food at their buffet and a pretty fair game of blackjack as well, considering most of the rest of the strip in that area.

Not Parker either and usually not much of a buffet person, but I must say I was really impressed with the Spice Market buffet at the Aladdin. My wife and I had breakfast there and we liked the food so much we went back for dinner later that trip. Fantastic!
I have also heard that the Bellagio has great buffets, but like just about everything at that place, you'll pay a high price for it.

I've always heard that the Rio has the best seafood buffet. The Mirage buffet was/is closed for remodeling. I'm not sure what their status is now but it used to be very good too.
I'd also vote for Mandalay Bay except for the time I went back for some butter for a roll and returned after just a few seconds only to find my still pretty full plate gone.

I think that everyone's fascination with the Rio buffet is simply because it's so darn big. I've never actually heard people say that it's good, and I've never eaten there, for a variety of reasons. I've also never - never - had any kind of seafood (except crab legs) from a buffet that I would classify as "good," anywhere, so I'm doubtful that the Rio has somehow figured out a way to serve good seafood when no one else has.
The Mirage buffet has reopened as a high-end restaurant/ buffet, with prices to match. I believe it's called "Cravings," or something like that. The ti buffet is currently undergoing the same transformation.
My vote for best downtown buffet goes to Main Street Station, very reasonable at, I think, $11.00 for dinner. I have some regular haunts, and I haven't been to most of the Strip buffets in a long time, but the Paris buffet is good at dinner, as is the Aladdin buffet. The Palms has really good baba ganoush, and a decent Wednesday night Italian theme (with free wine).
For locals joints, Sunset Station has a decent buffet with good hamburgers, Texas Station has a really good chili bar, and Fiesta Henderson (the old Reserve) has the best buffet pizza in town, hands down. Mind you, I'm a Chicago girl and nothing in town, not even the pizza joints, has anything like a good old Chicago pizza, and the buffets usually have some doughy piece of crap with ketchup and a little cheese on it. The Fiesta isn't awesome, but it's better than a lot of pizza places, and much better than any other buffet pizza I've had.

People have different tastes in buffets. Personally, if I'm going to spend $20 or more for dinner, I want someone to bring the food to me. Therefore, I tend to avoid the top-end buffets such as those at Aladdin and Bellagio.
Free buffets are the best, so I tend to frequent those in which the casinos have playable blackjack and easy comps.
Besides, I'm more of a downtown type guy. There I like the buffets at Main St. Station and Golden Nugget. Avoid those at Lady Luck and Fitzgerald's, even if you get them comped.
All the Station casinos, along with the two Fiestas, have decent buffets at reasonable prices.
