    Weapons like tasers, pepper spray or even knives and guns do no good unless you are experienced using them in a real situation. Otherwise they will just escalate things further, increasing the risk of a tragedy.
    Keep your eyes open and stay out of unsafe places, this is all that prevention you will need in most circumstances.
    If you play for high stakes at a place that you can play at rated, get a check from the cage instead of cash for large amounts.
    A "give up" wallet is a good idea.
    The conceal-carry folk/gun nuts are well intentioned but really, unless you are absolutely 100% positive you could use it without flinching in a situation, weapons will make the outcome far more likely to be tragic, and not necessarily for the perp. Which is to say nothing about the potential legal ramifications.
    Lastly, if you feel somebody might be in the vicinity, start muttering angrily about the casino, as if to say they bilked you out of your last dollar. Most criminals won't take the risk of going after someone who is A: angry to start, and B: broke from the casino.

    Just a thought, but with the wind blowing off the ocean on the Ac boardwalk, I'd be very careful discharging any sort of pepper spray.

    Where in Vegas are you walking off-strip? Any place you can walk to in Vegas, you can get there for $5 in a cab.
    For example, the walk from Treasure Island to Riviera or Resorts to Bally's is long with no casinos in between, and deserted at night. I'm big, I look like I can fight, and I don't dress like I'm rich. I won't give up $5000 easily. First thing I'd do if a robber tries to rob me is kick them in the balls, then pepper spray directly at their face. They won't expect someone to immediately fight back.

    In both cases, you are talking about a cab ride of under $10, including a tip. Why would you put yourself in an uncomfortable position for that?

    $10 seems pretty cheap, particularly since it increases overall hands/hour. But, even considering the high crime rate in Las Vegas, if you just look at ease, don't make eye contact, the odds of an attack seem slim. Remember, street criminals are looking for easy marks. Tourists. But, there are far more iffy casino locations. And if attacked, pull out your backup wallet. In such environs, I carry cash in multiple places. And, I don't mean one dollar. The guy will probably take $50 for a half-buy of coke or crank, if you aren't wearing expensive clothing. If he's messed up looking, maybe much less for a quick hit of smack So, give him $100 in small bills. Or, risk your life or spend a week replacing the non-cash contents of your wallet: emergency phone numbers, credit cards, license, insurance id, etc.
