As for live online Blackjack it really depends on which Game Provider the online casino uses. Nearly all of them use NetEnt I've never played their Live Blackjack games so I can't give you an outline of the rules. But some of them like William Hill, BetRivers, Draftkings use Evolution Gaming as a game provider. My experience with Evolution Gaming Live blackjack games is as follows.

8 Shoes
Dealer stands on Soft 17
Deck Penetration is 1 card width which equals to half deck pen
Splits on any pairs
no doubling allowed after splits
If you split Aces you only get 1 card

I've been counting using these rules and I've overall doubled my Bankroll after 2 months of play. But it is a Grind whereby I'm playing 4 - 5 hour sessions 5 days a week, and the variance is brutal. So I had to break up my Betting Units to 1000 instead of 100 or 200 to mitigate the high variance.

You might have to do your own research and check out each Online Casino to find out who is their game providers and then check out the game providers website to know what live blackjack is for them.
