I like the M Buffet. Not the best, but I like the food there. Also cheap cuz you can do like 500 coin in (or 1000? I don't remember) to get a "free" buffet. I also get free buffets via mail.
Ate at the Wicked Spoon (cosmopolitan) few days ago. That's now my #1 favorite in LV.
Caesar's Bachanal is my #2.
Ate at Bellagio's years ago, probably liked it so much because I was so young. Tried it again like a year ago, and either it went downhill or I realized it wasn't as good as I thought. Small selection, IMO.
Stations' buffet is hit or miss. At higher level stations, they're better. At lower level (like fiesta Henderson or palace station), not too good. Then again, I had eaten there 10 times in a month, so maybe eating there so frequently made me not like it anymore.

Main Street Station has a pretty decent buffet for the value, and like others have said, definitely the mid-to-high end Stations properties. I would put Orleans and Gold Coast a rung below MSS, but they are acceptable. The strip buffets are generally good, but overpriced. I liked M the one time I ate there; as good as the mid-level MGM properties.
Some of the not-so-good ones I've had include the Cannery and Rampart. And the absolute worst buffet I've had was at Terrible's. I would say it was about two rungs below Golden Corral.
