Craps tables used to be one surface, and no diamonds (for lack of a better word) on each end. Now, however, the tables are more "bouncy" and each end is a bunch of diamonds sticking out. This effectively ensures that the dice don't land flat, and when they hit the back wall they bounce randomly.
So were people able to control dice? I assume so, otherwise why would a casino change the structure of the table so much?
