I wouldn't want to hit it against an 8 upcard.
The reason why we hit vs 9, 10 or A is the same reason all basic strategy plays are the way they are: Our expectation for hitting is higher than for standing. Not all basic strategy plays are immediately intuitive.

As Parker states nor would I. Koda, you might want to check that one again.
Also remember that there are also alot of cards (10's) that would not change your hand. This might make seem a little more intuitive.
Pill
If you stand with a A7 vs dealer 10 you loose 18% per every $1 bet. If you hit A7 vs dealer 10 you loose 14% of every $1 bet. With A7 vs dealer 10 up it's a matter of losing less.

Even if the first hit is bad (4-8), the combination of two or more hits can total 11, 12, or 13 and still improve your hand.
