As I think about it, Niagara on the Lake isn't for kids. 2os & above would enjoy it.

Why not fly to Denver, then rent a car, drop car off in SLC, and then fly back from SLC. This would give you an extra day and you probably could then go over to Wendover. I was checking one way flights from SLC to STL and only $60 on Tue or Wed in middle of July on United.
Zee, Grand Junction CO is located where the Colorado River and the Gunnison River come together. When I was visiting family there many years ago they took us to see a very steep canyon on the Gunnison River. I can't remember the name of the canyon, but I do remember it was scary to look over the edge. There were straight steep canyon walls.
In doing a search on Google it was probably Black Canyon. It was well worth the drive to see. This was in early June, and I do remember we were going to have a picnic at the top of the Canyon and it started snowing.

If I may, Blackhawk and Central City are less than a mile apart (basically the same town). Central City tends to have better rules, every BJ table in Blackhawk I've been to is H17, whereas Central City is S17.
Also the drive to Central City is a bit more scenic than to Blackhawk, if you're coming from the Denver area.
Although, the food/buffets are a lot better in Blackhawk...
