I'm planning a trip to Las Vegas next month and have a few questions.
What can I expect to be the best game for a low limit player, 2 deck or 6 deck?
What rules? S-17 or H-17, DAS or NDAS?
Should I expect to find late surrender? Is it worth it?

That depends on your approach. There are some good DD games, but you wouldn't want to backcount them too blatantly. The shoe games are much better for that, especially at low stakes.

You can find just about anything for either game if you look long enough. For DD expect either H17 nDAS or S17 DAS. For shoes, anything from H17 nDAS nSurr to S17 DAS Surr.

You will find surrender games mostly on the Strip. Yes, it is certainly worth it, assuming you use it properly.

2 deckers, & even a 1 deck H17

2 deck S-17 & H17 DAS & NDAS; and 1 deck H17

Not find it on 1 & 1 deck, on 6 deck yes, and yes it is worth it if you know how to play a shoe...
Trackjack & CBJN & GreenChip at BJ21.com have the info you need about Vegas, but those are fee services.. two free
sources, which are of course limited in timeliness & complete data, are: www.cardcounter.com, that has a link listing the top five games in Vegas (one is high limit with a $50 minimum, another is $10 minimum, the other 3 are $5 minimum during the week); and www.skister.com/bj, which has some data, although not fresh.
You can pick up a copy of CBJN at the Gambler's bookshop in Vegas, or even drop by BJ21's office in Vegas to get a copy.
If your going on SuperBowl Weekend though I would not expect to find many low limit games...
On weekdays during morning hours 6-9am many casino's are slow and the limits are lower than most other times.
