Accurate Count vs Dealers Final Score

Excuse me for asking, but dealers final score? Are we referring to their hand total? Or is this some rating of dealers? I've never heard of their hand being referred to as a final score.

If they are going real fast, I will sometimes take an extra few seconds to make my playing decisions, just to slow them down. What really bothers me is when a dealer is anticipating playing decisions and making too many assumptions, trying to play our hands for us.

From what I understand he's talking about the drawings of the dealers and his hand total.
He's saying that the dealer deals himself the cards so fast and then shuffle all cards to the bin with a speed that he hasn't got the time to maintain count of these cards + check if the dealer was really winning the hand or not, resulting in a count-loss and not the possibility of being robbed on hands he had won.

For super-fast dealers use a super-easy count like Hilo

I don't use an easy count and I can keep up with any dealer I have faced. If you can't keep up you simply need more practice. With enough practice the count just happens in your head without ever thinking about counting.
