    Where IS surveillance?

This is a question I've been pondering for some time. Many years ago (before EITS), I heard that the surveillance people were on catwalks above the ceilings. With all of today's technology, there's no need for them being overhead or even on premises.
The big places surely must have their surveillance people on site but what about smaller places (in the midwest, for example). Are their cameras fed to people in Las Vegas, let's say? A little store in northern MN with only 2 BJ tables surely doesn't have on site surveillance people beyond the "floor", I'd think. Where is the guy they talk to on the phone?
    All answers appreciated.

I'll answer for my local stores, which may or may not reflect any practices in other places. The gambling in my state (it's not a state, but equivalent to a state) is either run, or at least licensed, by a government owned corporation. The two government run casinos in the city have a building in a separate location that does surveillance for both. Each casino use to have their own surveillance department, but this caused problems for when one casino was understaffed and required sending people from one location to another.

"Midwest" guy here, all of the casino surveillance at my local stores is handled in house by a semi-dedicated team of guys, though sometimes the floor guys will rotate into the "surveillance" group if there's a need to cover a shift. Talking with them, most of the time they are monitoring hard/soft count tape, and casino employee surveillance and only rarely delve into patron surveillance when they are called from the floor to do so, and in most cases its to check on a dealer error or patron dispute.
